Cocoa is an evergreen tree that naturally grows in the lower part of the eastern slopes of the Andes in South America, and is a source of cocoa and chocolate. His botanical name Theobroma cacao, literally translated means “food of the gods” or “divine food.” These include several trees that are members of Theobroma, but only Theobroma cacao is used for making chocolate. The fruit is broken, so that the seed can be collected. Seeds are left in the bowl to ferment for a week, until they receive a distinctive purple-brown color. After fermentation, the grains are dried and stored for further processing.
Cocoa is made from dried seed, after its fat is removed (butirum cacao – cocoa butter) used for the production of chocolate. About 3% of cocoa is made up of bitter alkaloids, caffeine, theobromine, and more, while half of the weight of the seed comes from its fats.
